Since I got Celiac disease, I thought I learned I couldn't eat anything with malt in it. This is true. BUT, I had wrongfully assumed that 'maltodextrin' was the same thing as 'malt.' WRONG! I can eat maltodextrin!! There are many things I didn't eat just because of maltodextrin. It was a wonderful moment when I found this out!

I went on a picnic the other day with my husband and our friends. The struggle...there isn't much I can take to eat on-the-go. If you've ever tried Gluten Free bread, you know that when it isn't toasted, it tastes exactly like chalk. (Gross!) So, I can't just make a PB&J or turkey sandwich with GF bread. We couldn't figure anything out for me, so I ate before we left (a quesadilla on a corn tortilla) and then just snacked on things at the picnic. It wasn't ideal, but it worked!

There is a certain side affect to having Celiac disease that I never expected. I have nightmares. About eating gluten. Seriously. It's kind of funny. I will have a dream that I am eating cake or bread. Usually I realize during my dream that I am going to get sick, but I keep eating it. I fear I am going to get sick, but I just keep eating! Who knew you could have night mares about eating good food?

Thank goodness for Costa Vida!! Seriously, I don't know what I would do without it. We are definitely people who wrack up those Costa Card points pretty fast. If you aren't aware (I wasn't until recently), Costa went Gluten Free a short time ago. Almost everything on their menu is gluten free. Just ask them for it gluten free, and they will get it for you! Seriously, life savers. <3

Jordan recently found me a new GF bar that I really like! I've never been a big granola bar person, but these bars are really good! They are called "Kind." I keep some in my desk at work for a quick, yummy snack!

I made my favorite chocolate chip cookies this week, but I replaced the regular flour with a gluten free mixture. They actually turned out pretty good! They cooked a little differently, but still tasted awesome!

I recently found Tyson's Gluten Free chicken nuggets at my Wal-Mart. I almost started crying. They tasted so good.

A few days ago, we painted a bunch of walls in our house. We had some wonderful family/friends who came to help us. Around noon, I ran to Little Caesar's to get some pizzas for everybody. Bad idea. It smelled so dang good in there. The cashier asked if I wanted to add crazy bread. Ouch. I love crazy bread.
BUT, one of my new year's resolutions is to have a good attitude about my condition. This doesn't mean I'll pretend it isn't hard or that I don't miss gluten, I just want to try to remember how much better I feel. I get sick significantly less. It is totally worth it!

The other day, I went to a wedding shower, it was great! Except, I couldn't eat anything. For some reason, some days with Celiac are harder than others. This day was a little rough. There was fruit pizza, yum, one of my favorite things before my diagnosis. Also, there were those yummy chicken sandwiches on crescent rolls. Most days, I can keep a really positive attitude about it. It is totally worth it not to eat gluten, because I feel so much better. I don't get sick! It is so nice. Some days though, it is just plain hard. I crave a hamburger on a normal bun and a piece of greasy pizza. Mmm...I miss pizza. In one of my classes the other day, it was the last day, so some people brought treats to share. I swear, the chocolate cookies looked like they came straight from heaven. Like they were sent down on a cloud of sugary goodness. But, only my eyes and nose could enjoy them. No taste buds! Did I mention there were donuts with sprinkles too? Man, they smelled and looked so good..
